Savory Breakfast Quinoa Bowl

Ingredients:

  • 1 cup cooked quinoa
  • 1 soft-boiled egg
  • 1 cup leftover veggies or:
    • handful of kale
    • ½ cup mushrooms
    • ½ cup cherry tomatoes
  • Chili oil or avocado, to top 


Directions:

  1. Heat a drizzle of olive oil in a pan over medium heat.
  2. Sauté vegetables for 5-7 minutes until tender and lightly browned. Season with salt to taste.
  3. While vegetables cook, prepare egg (soft boil for 6-7 minutes, or fry over medium).
  4. Place 1 cup cooked quinoa in a bowl and top with sautéed vegetables and egg.
